Abstract
This special edition of Food Hydrocolloids is based on the 1st UK Hydrocolloids Symposium, held on the 10th of September, 2013, at the University of Huddersfield. The meeting was attended by nearly 80 chemists, food and pharmaceutical scientists and was organized around the theme of “Bridging the Divide between Food and Pharma” and aimed to promote the cross-fertilisation of ideas between disciplines for hydrocolloid applications.
